Meroir Preferred definition
We see merior, as the ocean version of terroir. Terroir focuses on the flavor of land, while meroir focuses on the influences that water has on a food. These influences may include temperature, minerality, salinity, algae content, as well as living organisms. Meroir is also reflective of what is going on the land. Meroir, arguably, tells a story of what is happening in the world. Terroir feels more controlled where the ocean lives its life.
