Most Memorable Oyster
In California my friend’s family went shellfishing and brought back a small bucket of oysters and clams. They invited my family over for dinner and that was where I had my first oyster. We built up a hot fire with a thin grill rack over it and then placed the oysters on it. We watched as smoke and flames and heat stroked the shell and slowly cracked an opening into the salty, liquid center. After they were done we carefully shucked them the rest of the way (I cut my hand) and carefully poured a coconut oil, herb, cayenne pepper, and agave nectar sauce over them. The saltiness of the oyster’s ocean flavors, combined with the the sweet and savory sauce, created a balance of taste that is rare to experience and difficult to recreate.
