This evening I made two rhubarb pies from the same recipe. In the first pie’s filling, I used organic white sugar and in the second filling, I used raw honey from It’s All About Bees. The rhubarb was harvested from the farm that I am spending the majority of my case-study time.

Sugar Honey
Aroma
  • I could practically smell the tartness
  • fruity
  • very subtle
  •  floral like the honey
Appearance
  • juices were bright red
  • juices were mostly clear, very little red tint
Texture
  • rhubarb pieces were very tender/squishy
  • same as sugar/rhubarb
Taste
  • sweet notes hit my tongue immediately
  • felt on tip of tongue, then dissipated
  • tart flavors were strong, came and went with sweet
  • sweetness appeared slower
  • flavor lasted, entirety of mouth
  • tasted sweet first and then tart
  • tart flavor was weaker than sugar/rhubarb
