Meroir/Terroir + _____ (oysters)

Meroir is the taste of the sea in relation to location and season. The ocean goes through many processes that effect its nutritional content provided for inter and sub tidal marine life that varies throughout the year. This in turn translates into the flavor of the ocean “trapped” inside oysters.

Oysters are the embodiment of meroir/terroir. We have been given hard evidence of the drastic difference between an identical oyster species and the differences that can occur when they grow in different regions, and regions not that far from one another at that. The oyster is incredibly expressive of the area it grows and develops but it can also be changed by outside factors like heavy rainfall “diluting” or cleaning the water, or algal blooms occurring in the hot summer months which then translate into dangerous or toxic oysters. Oysters are extremely sensitive and receptive to their environment therefor can be an important example of the quality of our water and the benefits of their presence.
