The way in which the same species of oyster can grow to look and taste dramatically different depending on where it grows is the real physical manifestation of terroir not only in taste but in appearance as well.

The variety of flavor in oysters from one bay/inlet to another is incredibly eye opening and makes me ponder the power of marketing to take five major varieties and create space for the dozens of specific flavor profiles found in North America alone.

The insight that I took away most from our oyster tastings is how I like my oysters to be prepared. After trying oysters raw I quickly realized that experience was not my cup of tea, but during our Donedei Winery tasting trying grilled oysters was a completely different experience for me. Though usually served with raw oysters, the addition of a mignonette to the grilled oyster gave it an irresistible flavor.
