Meroir / Terroir definition
Meroir is the taste of the sea. It directly correlates to the ocean where the food comes from and the taste of the food has distinct relation to the original body of water. This taste is composed from elements such as the minerality and salinity in the water. As well as the conditions in which the food is grown and the cultural practices that are tradition in that individual area. In comparison, terroir not only relates to the earth (ter=earth) but also relates to the people, culture, history and more that build the taste of the food. Where terroir is composed of the soil and the vast geological background that has created that soil, meroir is similar in make-up but arguably has been less cultivated throughout time.
