Beside oysters being integrated into cultures of the United States and around the world, in the past few decades oysters have revolutionized as whole new product. The oyster has returned to being its most simple organic form- a raw oyster off the half shell. Due to oysters now being eaten in its most vulnerable form, the business and farming of them have also evolved, turing the meroir into a true craft and art form. How and where oyster are raised will dramatically affect the taste. No longer are oysters being masked by creams and sauces.
So what does this mean for the oyster in the business world? Due to over farming, oysters are no longer commonly found in their native habitat. They are being transported all over the world to be enjoyed by the consumer in high demands.
