Rice; Chicken; Marlin Keleguen; Mango

The rice goes with the chicken and marlin kelegun. With the chicken, it adds a grainy texture and a much more fuller mouth feel. The marlin kelegun is composed of coconut, pepper, marlin, green onion, and lemon juice. It is an intense flavour that is sweet and sour. And the texture is interesting: soft and chewy from the marlin, but grainy with the coconut and a mild crunch from the onion. Truly unique as a staple Chamorro dish. Another staple dish would be the mango. Pickled in kimchi base and vinegar, the mangoes have a crunch and excite your tongue with the spice and flavour of vinegar.

 

I had this for lunch and it is a common combination for any meal.
