Cacao Ginger Truffles

After going cacao crazy in the Talamance region, and inspired by the heirloom cacao varieties and recipes people created, I decided to experiment myself. I created some unbelievable delicious and easy to make truffles. Below is the recipe and process.

Cacao Ginger Truffles- Vegan and Gluten Free!

-1 cup of best quality cacao you can find, I used a pure Talamanca cacao

-About 1/2 a cup of coconut oil

-About 1/4 a cup of raw honey, or more or less depending on your taste preference

-1 tablespoon raw ground ginger, again more or less depending on your taste preference

-1 teaspoon vanilla

-pinch of salt

First heat some water, and then place a bowl in the heated water. In the bowl that is inside the water, add cacao, allow it to melt, and then slowly add the coconut oil, honey, ginger, vanilla and salt. Keep the heat low to not burn, and as soon as the all the ingredients are melted and mixed, take off the heat, allow to cool, and place in the refrigerator for a few hours. The cacao should become firm yet fluffy, and delicious. Enjoy!
