What are you eating?

No, this is not a new map you have to post on. It’s an invitation to tell others good dishes you have invented for yourself and others on the Way. Here are two things we have enjoyed out of Liza’s recipe book.

1. Red pepper boats. In the markets there are these huge (7″ high, 3″ diameter, 1/3 kilo) sweet, burnt red peppers. Cut into slices. Fill a slice with Jamon-wrapped stick of cheese. We’ve often used the Basque sheep cheese idiazabal. You don’t have to use jamon. You don’t have to use anything.  Just eat the peppers.

2. Broccoli bits. Get one of the nice heads of broccoli in the market. Steam it to desired tenderness. Cut into bite-or-bigger chunks. Put them into a bag when cool; add olive oil, salt and pepper. Shake the bag. Eat all the next day.

    Our friend in Barcelona taught us to make an inexpensive and very filling, healthy pasta meal! It may not seem particularly advanced, but I’m a very inexperienced chef and this has been both a lifesaver and a very inexpensive way to make a communal dinner for your new amigos! All you need is a handful of veggies, feel free to pick and choose as you like! My favorite combination is:
    -1 carrot (zanahoria) -1 sweet onion (cebolla dulce)
    -2 cloves of garlic (ajo) -1 large tomato or 2 small ones
    -1 green pepper (pimiento verde)
    In a large saucepan, sautee all of the veggies (with salt, if desired) in olive oil while (in a separate pot) boiling pasta in water with a touch of olive oil and a pinch of salt.
    Add tomato sauce to the vegetables when they’ve reached your desired softness-crunch ratio, and allow to reach a simmer, then serve warm! It’s also delicious straight from the refrigerator in the morning as a quick meal with a lot of good nutrients, carbohydrates and calories to keep you going all day! Give someone a pot of spaghetti and he’ll eat for a day, teach a greener to cook an incredible pot of spaghetti and she’ll feed herself and everyone else while passing along the knowledge!
