A very veggie pilgrim meal

Tonight my group and I concocted a very special, heart and belly warming vegetarian meal. We were fortunate enough to be in an village that had both a very well stocked supermarket as well as an albergue with a highly functioning kitchen and dining area!

Our most recently made friend from London, Rose, came up with the idea to make an easy, protein packed vegetarian meal. Chickpea/lentil/carrot stew, fresh salad, with rice and a baguette. Simple enough, and very satisfying.

Overall the entire meal cost each of us €2.5! And we have tons of leftovers.

It felt so good to finally cook a meal- it had been way too long! Cooking and creating our own food from markets is also really saving my budget! So thankful for the opportunity and creative energy to make something and share it with others. It is also a great way to make new friends in the albergues! It brought back memories of being in the Sun Kitchen at the Evergreen dorms (where I would spend most of my time last year) and it made me miss cooking with my housemates and family back home. I even caught some nostalgia while washing dishes- who knew I would ever miss that???
