Chehalis Eggs

I am a little late to write about this, but I wanted to talk a bit about “Chehalis Eggs”. They were extra fun for me because they were the first meal of the season that I prepared  from the “fat” of the land.

Chehalis Eggs
3 eggs from my friend Letha’s Front yard
2 cups maple fronds with leaves removed
Chives to season from front yard
Oregano from front yard
1 tsp org. valley butter
Salt and pepper to taste

I cooked the fronds for a few minutes on high heat before reducing the heat and adding eggs and fresh spices.
