My first day back, my grandfather’s younger brother has a party to celebrate Mother’s day, his wife’s departure, my arrival, and “just because”. It is the first time in a long time where all 8 of my grandpa’s siblings are together. We celebrate this special occasion at their old childhood home; known in the family as “the ranch”
- Meat that has been soaking in the marinade for over 48 hours
- A grill composed of a wire shelf, keg, and and legs from a cot.
- No sauce is added on top as it is all within
- Cooked whole, it is my job to slice them up to individual pieces.
- We always have it cooked to well done
- “Mejas” means socks. He is named that because it looks like he wears socks over his paws.
- My uncle stabs the ax into the ground. We use this not to pick away at something, but to tear the husk off the coconut
- He rips the coating off and throws the fibers to jungle.
- “White gold”
- He sits on a blade fastened to metal rod. He runs the meat of the coconut over and over, shredding it apart.
- While BBQin, we enjoy some nice pastries from the local bakery and drinks
- Red rice and white rice
- Tatityas, ribs, honey walnut shrimp, and sweet & sour shrimp
- shrimp patty, pot roast, chicken and fritatta
- Desert
- Dinner is served!
